Trinidad ColeSlaw Recipe

ColeSlaw is a simple easy to make salad that is made with basic ingredients.  I remember when I was a young child this is the first thing my mother taught me to make and I had to make it every Sundays for lunch.

2 cups of thinly sliced cabbage
1/2 large carrot
Garlic powder
Onion powder
Salt to taste
1 tablespoon raisins (optional)
1-2 tablespoons mayonnaise
a bit of black pepper

Using a very sharp kitchen knife, thinly slice the cabbage on a cutting board.  If you have an appliance that can do this task perfectly, go right ahead and use it.

Grate the carrot and place with the cabbage into a mixing bowl. You can also use the purple cabbage for a variation of color in your soleslaw. Also occasionally, like around Christmas time I like to add some raisins to my coleslaw. To me it gives the salad a festive flavor.

Add the seasoning, garlic powder, onion powder, black pepper and mix together well.   Add the mayonnaise (some times the brand of mayonnaise that I get in my grocery store is a bit salty so I don’t add any salt.  However taste your salad after adding the mayonnaise before adding any salt). Mix everything together well. Transfer to a serving dish.  Layer thinly sliced pieces of tomatoes around the circumference of the dish.  Serve.
