How To Make A Delicious Vegetarian Pelau

What is Pelau?  Pelau is a one pot cook rice with pigeon peas and any meat of your choice.  Generally chicken is used.  Beef or shrimp can be used.  In this video I would not be using any meat and will be making a vegetarian pelau.

Ingredients
1 can of pigeon peas
1 1/2 tablespoons brown sugar
2 tablespoons oil
carrot cut up into small pieces
pumpkin cut up into small pieces
1 cup rice
parsley flakes (fresh parsley is preferred if available)
onion finely chopped
chive finely chopped
your favorite all purpose seasoning
3-4 garlic cloves finely chopped
2 cups coconut milk
1 1/2 tablespoons ketchup

Method
Put a deep pot on the stove, allow it to hot, add the oil then the brown sugar. The brown sugar will begin to melt, stir to get an smooth consistency through out. This is the browning that is required to have this dish get this beautiful brown color.


Add the pigeon peas (fresh pigeon peas is preferred for this dish), then the onion.  Stir.  Add the carrot and pumpkin.  Stir well.  Add the rice, all purpose seasoning, garlic powder, chive.  Stir well.


Add the coconut milk and allow the rice to cook.  About half way through the cooking process, add the ketchup.  If the rice does not have the color that is characteristic of a pelau, you can add a small bit of ready made Browning Sauce.  Be careful not to add too much otherwise the rice will be too dark and will have a bitter taste


When the rice is fully cooked and all the moisture has dried out, turn off the stove.  Enjoy!


You can serve a slice of avocado with this dish. A delicious combination!!
