How To Make Trinidad Sweet And Spicy Red Mango

5 green mangoes
1 teaspoon red food coloring
2 cups sugar
1 tablespoon mixed essence
1/2 teaspoon nutmeg
3 bay leaves
1 cinnamon stick
1 tablespoon cinnamon powder
1 teaspoon salt
1/2 hot pepper chopped

Using a Chinese chopper, cut up the mangoes into small pieces as seen in the image above. Wash the cut up mangoes and place into a large pot of water – enough to cover all the mango. Add some salt. Allow to boil for 15-20 minutes until the mangoes are nice and tender.

After this time has passed, turn off the stove and throw out the water.

Put the pot back on the stove with the mangoes. Add about 2 cups of water, mixed essence, spice, bay leaf, nutmeg, sugar and red food coloring. Mix until well combined. Allow to simmer until liquid has reduced and thicken.

Note: you can also add a hot pepper to this recipe if you like spicy food.
