In this blog post I share how to make a refreshing homemade mauby drink. Mauby/mabi/mavi/maubi is an invigorating bittersweet Caribbean drink that is also healthy. Some health benefits that associated with this drink are: lowers high blood pressure, reduced cholesterol, relieves arthritis.


Ingredients
4 pieces of mauby bark
1 cinnamon stick
2 teaspoons aniseed
1 1/4 cups sugar
1 teaspoon clove
almond essence
Angostura bitters

Method
Put the mauby bark, cinnamon sticks, aniseed and clove into a large pot with 10 cups of water. Put the pot on the stove and allow to boil for 15-20 minutes on low heat.

After this time has passed, turn off the stove and allow mixture to cool. Put a strainer over a mug and pour the mixture into the mug through the strainer. Add the essence, sugar (you can either use brown or granulated sugar) and Angostura bitters. Stir well. Note: you can reuse the mauby bark, just place it to dry and store after use.


Refrigerate or serve with ice.
