Hey Hey Hey folks, welcome! In Trinidad and Tobago, as a youngster, I remember my dad use to make Curry Mango and it was spicy but tasted so so good. So in this blog post, I share his finger licking recipe with you.
Ingredients
2 small green mangoes
2 tablespoons olive oil
1 tablespoon brown sugar
1 tablespoons curry powder
salt
black pepper
1 teaspoon pepper sauce
1 tablespoon sugar
Method
Cut the mangoes length wise and remove the seed. You can also get the already cut up mango in the freezer section of the grocery store.
Put the curry powder in one cup of water and mix together well. Set aside.
Put a deep pot on the stove and add the olive oil when the pot is hot. Add the brown sugar. As it begins to melt and bubble, add the curry water and allow the curry to cook very well. Add the mango. Season with salt about 1 teaspoon, black pepper, pepper sauce (you can also use a hot pepper), brown sugar. Mix together.
Allow the curry water to boil and the mango to cook. You might need to add more water for the mango to fully cook. Taste for adequate salt and pepper. Allow most of the sauce to dry down before turning off the stove. Enjoy!!!
