Trinidad Kachori/Kachourie Recipe

Kachori/Kachourie is a street food that is fried in Trinidad and Tobago – inspired by Indian cooking, it is filled with split peas and chick peas aka channa.

Ingredients

1 cup channa/chick peas

1/2 cup split peas 3 cups water (for soaking) green seasoning of your choice 1 teaspoon salt 1 teaspoon saffron powder 1 tablespoon baking powder 1 1/2 tablespoons all purpose flour
Oil for frying

Method
Put the split peas and channa into a bowl, add water (enough to cover all the peas) and allow the peas to soak overnight. Next day you will notice that the peas would have swollen quite a bit, are a bit tender and absorbed most of the water.
Drain out the water, wash and add to food processor along with green seasoning. The saffron powder and salt may be added at this point for even distribution. Transfer to a mixing bowl, add the baking powder and gradually add the flour, mix together well.
Form a tablespoon of the mixture into a circular shape and set aside. Repeat this step until all the mixture is used up.
Put a frying pan on the stove to hot. Add some oil and allow to hot. Place the kachori/kachourie into the frying pan with the hot oil to fry, flip after 5 minutes. Drain on plate lined with paper towel and serve with your favorite chutney.
