Saheena Recipe Easy Method

Saheena in a very popular street food Indian delicacy in Trinidad and Tobago.  The main ingredient is dasheen leaves aka taro leaves.  Dasheen is a root vegetable that grows under the soil.  In the Caribbean dasheen is known as ground provision.  The dasheen grows leaves above the soil and as they grow larger it is a indicator of the maturity of the dasheen.  The dasheen leaves are used to make another popular dish in Trinidad and Tobago called Callaloo.

Ingredients
1 cup split peas powder
1 cup all purpose flour
2 cups finely chopped dasheen bush leaves (taro leaves)
juice of 1 lime
1/4 cup green seasoning
1/4 teaspoon turmeric powder
1 teaspoon salt
1/4 teaspoon cumin powder
1 teaspoon baking powder
2 teaspoons yeast
1/2 cup luke warm water


Method

Put the dasheen bush leaves in a large mixing bowl with some water.  Add the lime juice and squeeze into the leaves well.  Squeeze out the water from the dasheen leaves.

Add all the ingredients to the dasheen leaves and mix together very well.  Add the water and mix together.  The consistency should be sticky and a bit runny.  Cover the mixing bowl with a damp paper towel and allow the mixture to rest for about 45 minutes.

Put a pot on the stove and add about 1 cup of oil.  Allow the oil to hot.  Wet your hands with a bit of water and take out a handful of the mixture and form into a circular shape.

Lower the heat on the stove to medium heat and add the shaped mixture to the pot with the hot oil. Fry each side for three minutes until golden brown.  Remove from the pot and put on a plate lined with paper towel.
