Recipe For Trinidad Boil Corn

As a youngster, I enjoyed going to the market with my mother and one of the food items we would normally purchase, when they are in season, is corn on the cob.  And one of the ways I enjoyed the corn to be prepared is to boil them.

Ingredients

3 corn on the cob cut into half

3 pimentos finely chopped
3 garlic gloves finely chopped
1/4 teaspoon black pepper
1 teaspoon salt
teaspoon dried basil
fine leaf thyme (aka French thyme) 
shadon benni aka culantro finely chopped
homemade green seasoning
1 hot pepper
Method
If you purchase the fresh corn from the farmers market with the husk on etc, you will have to peel off the husk and silk.  Save a few pieces of the corn husk.
Add  corn to pot with water and the other ingredients – dried basil, pimento, shadon beni, green seasoning, garlic gloves and 1 hot pepper.  
Place a few pieces of the corn husk (in the video my mom used some green banana leaves) on top of the corn and allow them to cook which should be about 45 minutes.
Remove and serve.
