Recipe For Stewed Dry Pigeon Peas

stewed dry pigeon peas
Ingredients
1 onion finely chopped
1 medium size tomato cut up into small pieces
salt
black pepper
3 garlic cloves finely chopped
2 tablespoons of oil
2 sticks of chive finely chopped
1/2 jalapeno pepper cut up into small pieces
2 cups dry pigeon peas
1 cup pumpkin cut up into small pieces (you can also add some carrot cut up into small pieces)

Method
If you are using the dry pigeon peas that are not tenderized, you will have tenderized the peas in either a slow cooker or a pressure cooker.

Put a pot on the stove and allow it to hot.  Add the oil.  When it is hot, add onion, garlic and sauté or a few seconds.  Add chive and jalapeno pepper.  Sauté.

Add the pigeon peas and pumpkin (and carrots if you are using this ingredient in this recipe).  Mix together well.  Add salt and black pepper or you can use your favorite all purpose seasoning.  Add about 1 cup of water and allow the ingredients to simmer and the pumpkin to get tender.

After about 15 minutes add the tomato.
As the pumpkin begins to soften and mash up, it will thicken the stew.  Taste.
Cooking time 25 minutes.
