Recipe for Breaded Eggplant |
In previous recipes I used, it required that the eggplant be fried. I noticed that the eggplants absorbed alot of the oil so the end product was a bit too oily for me. So you could imagine how excited I was when I found this recipe. I enjoy it so much and make it frequently. No frying what so ever!!!!
Ingredients
1 eggplant
1 eggplant
breadcrumbs
garlic powder
onion powder
all purpose seasoning
1 egg
Method
Using a sharp knife cut the eggplant into thick slices. Put the bread crumbs, onion powder, garlic powder and all purpose seasoning into a bowl and mix together. Crack open the egg into another bowl and whisk.
Dip one slice of eggplant into the beaten egg then into the bread crumbs. Set aside. Continue this process until all the slices of eggplant are coated in the bread crumbs and egg.
Grease baking tray and place the breaded slices of eggplants on the baking tray. Set the toaster oven to 350 degrees. Place the tray with the slices of eggplant into the toaster over and bake for about 15 minutes. Turn them over and bake for another 10-15 minutes.
Remove from the toaster oven. Enjoy!
