Hey hey hey folks, I love oxtails but they are a bit on the expensive side so I don’t eat oxtails often. In this post I share my recipe on how to stew oxtails. Enjoy!
Ingredients
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon turmeric powder
2 pounds oxtails
juice of 1 lime
1 tablespoon garlic powder
1 tablespoon onion powder
Method
Remove the oxtails from the packaging and wash out thoroughly. Transfer to a mixing bowl, add some water and juice of one lime. Allow the oxtails to soak in the lime water for about 15 minutes.
Through out the lime water and wash the oxtails again. Season the oxtails with some homemade green seasoning – like 1 full tablespoon. Add salt, black pepper and any of your favorite seasoning. Allow the oxtails to marinate for about 1 hour.
Oxtails are tough to it takes some time to tenderize the meat. So we will be using a pressure cooker to shorten the tenderizing period.
Put the pressure cooker on the stove to hot, add some oil about tablespoons. Add 1 tablespoon brown sugar and allow the sugar to caramelize. Stir to get an even color. Add the oxtails and coat with the caramelize sugar. Partially cover the pressure cooker and allow to simmer for two minutes. Stir.
In the bowl that the seasoned oxtails were in, add water and throw into the pressure cooker. Cover the pressure cooker and allow the oxtails to pressurize for about 45 minutes. After this time, remove the cover of the pressure cooker, taste and add salt if necessary and a hot pepper (optional). Allow excess water to dry down leaving enough for gravy if your desire.
