How To Stew Conch

Ingredients

2 pounds conch
onion finely chopped
parsley finely chopped
celery finely chopped
seasoning peppers finely chopped
garlic finely chopped
lemon juice
cayenne pepper
black pepper
sazon seasoning
1 1/2 tablespoon tomato paste
red sweet pepper sliced.


Method
Clean conch and cut up into small pieces. Place into a bowl of water and add the juice of one lime. Allow the conch to soak in the lime water for 20 minutes.  

Throw out the water, transfer to a pot and add fresh water.  Put the pot on the stove and allow the conch to get tender.

Now that the conch is tender, throw out the water and season the conch.  Add some of the finely chopped onion, parsley and parsley, garlic, lemon juice, seasoning peppers, black pepper, cayenne pepper, sazon seasoning.  Mix everything together. Allow the seasoned conch to marinate for about 2 hours.

Put a pot on the stove and add 2 tablespoons oil.  Add the balance of the onion, seasoning peppers and garlic and sauté for a few seconds.  Add the tomato paste and mix in with the herbs.  Add a small bit of water to loosen up the tomato paste a bit.  Stir.

Add the seasoned conch and mix together.  Add some water and allow to simmer. Add the balance of celery and parsley and a few strips of red sweet pepper.  Taste.  Enjoy!!
