1 tablespoon oil
1 tablespoon brown sugar
1 tablespoon ketchup (optional)
all purpose seasoning of your choice
dried basil leaves
Cut up the eggplant into small pieces with the skin on. Cut up the seasoned chicken and seasoning peppers into small pieces.
Put a pot on the stove, allow to hot and add the oil. Add the brown sugar and allow it to caramelize. Add the seasoned chicken and mix into the caramelize sugar. Fully coat the chicken.
Add a little water, then the eggplant, dried basil leaves, seasoning peppers, all purpose seasoning and mix together. Allow to simmer for approximately 25 minutes. You can add some ketchup but this is optional.
