Virgin Islands Coconut Tart Recipe

Ingredients For The Dough:

2 cups all purpose flour
1 tablespoon baking powder
1 egg
1 tablespoon almond essence
4 tablespoons butter
1/4 cup brown sugar
1/4 cup evaporated milk
4 tablespoons shortening
Ingredients For Filling
3 cups shredded coconut
1/2 cup granulated sugar
2 tablespoons coconut water
1 tablespoon vanilla essence

In a mixing bowl, add all the dry ingredients and mix together. Add the butter and shortening and mix together.  In a measuring cup add the egg, almond essence and milk and whisk together.  Gradually add the liquid ingredients to dry ingredients and form into a dough.
Wrap the dough in a piece of plastic wrap and place in the fridge for 2 hours.
Put all the ingredients for the filling into a sauce pan, mix together and place the pan on the stove and allow the coconut to cook and the sugar to melt and thicken.  Turn off the stove and allow the filling to cool.
Remove the dough from the fridge.  Sprinkle a bit of dry all purpose flour on counter top and roll out the dough with a rolling pin.  Be gentle rolling out the dough it will be very delicate and might begin to break.  
Grease an 8 inch round baking dish with some shortening and sprinkle with a small bit dry all purpose flour and spread evenly around the entire inside of the baking dish.
Transfer dough to baking dish – to do this pick up the dough by gently rolling into the rolling pin and gently placing it into the baking dish.  Using a pizza cutter, gently cut off the excess dough, that would be hanging off the baking dish, and set aside.
Transfer the coconut filling to the baking dish that is lined with the dough. With the left over dough, roll out and cut into thin strips.  Place some strips horizontally over the baking dish they some vertically.  Next place another strip around the circumference of the dish and seal by gently pressing the edges with a fork.
Set oven to 350 degrees Fahrenheit /177 degrees Celsius.  Place the baking dish into the oven and allow the coconut tart to bake for 30 minutes.
