How To Make Ducana

Ducana is very popular in some Caribbean islands like St. Vincent, St. Lucia (it’s known as Pelmi), Jamaica, St. Kitts & Nevis and Antigua.  In Trinidad and Tobago, we make a similar dish and it is called Paime and made with corn meal.  The ducana is made with sweet potato and also known as conkie

The following ingredients were used in my video below.

Ingredients
3 1/2 cups grated sweet potato
2 cups of grated coconut
1/4 cup all purpose flour
1/2 cup raisin
1/4 teaspoon cinnamon
1 tablespoon grated ginger
1 cup granulated sugar
3 tablespoons butter


Revised ingredients

Note:  the reason I revised the list of ingredients is because I felt that the ducana was a bit too sweet and I got more of a coconut flavor than the sweet potato.


3 1/2 cups grated sweet potato
1 cups of grated coconut
1 tannia or 3-4 eddoes
1/2 cup raisin
1/4 teaspoon cinnamon
1 tablespoon grated ginger
1 cup granulated sugar
1 tablespoon butter

Notes:  I used a grater to grate my coconut but if you have a food processor use that, as the process will be faster and the coconut will be grated into much smaller pieces.

Instead of flour, Vincentians use eddoes or tannia which are both ground provisions and look very similar.


Method

Peel and wash the sweet potatoes, eddoes or tannia (optional) and grate.


Put all the ingredients into a mixing bowl and mix together well.

Cut pieces of foil as we are going to make packets of ducana. Just put about 2 tablespoons of the mixture into a piece of foil and fold as seen in video below.

Traditionally banana leaves are used.  The banana leaves has to be heated first (this process is necessary otherwise the banana leaves will break up when you try to fold them) and cut up into small pieces.

Put 2 tablespoons of the mixture on a piece of the heated banana leaves and fold as seen in the video below.

Put a deep pot with water on the stove and allow the water to boil.  Gently put the packets of ducana into the boiling water and allow them to boil for 45-60 minutes.
