How To Make A Savory Green Plantain Pie

Ingredients
4 half green plantains
1/2 onion finely chopped
1/2 red sweet pepper finely copped
parsley finely chopped
garlic powder
 salt
black pepper
2 tablespoons black pepper
mozzarella cheese or any cheese of your choice

Method

Wash the green plantains. Cut off the ends of the half green plantains, cut each one in half and put in a pot of water.  Put the pot with the plantains on the stove and allow the plantains to cook.  Add a bit of cooking oil to the pot with the plantains, doing so will prevent the stain from the plantains from sticking around the circumference of the pot. Cooking time should be about 20 minutes.


When the plantains are cooked and cooled, remove the skin and place into a mixing bowl.  Add about 2 tablespoons of butter and using a potato masher, mash the cooked half green plantains.  Add the finely chopped onion, sweet pepper, parsley, salt, black pepper, garlic powder and mix together.  Taste the mixture.

Transfer to a greased baking dish.  Put some butter on top of the mixture – around the edges.  The green plantains has a tendency to be a bit dry so adding butter helps to keep the pie moist. Coat with mozzarella cheese.

Set oven to 350 degrees.  Put the green plantain pie to bake for approximately 45 minutes.
