Chicken Pies Recipe

You will need
2 cups all purpose flour
1/4 teaspoon salt
1/4 cup butter (4 tablespoons)
1/4 cup shortening (4 tablespoons)
cold water
1 egg

Filling:
1 1/2 cup cooked shredded chicken
1 teaspoon homemade green seasoning
1/4 teaspoon back pepper
1 teaspoon salt
1/4 teaspoon paprika powder
1/4 teaspoon chili powder
1/4 teaspoon curry powder
1 onion finely chopped
4 garlic finely chopped
1/2 grated carrot

Method
Pour the flour into a mixing bowl, add the salt, butter and shortening and mix together well.  Add the cold water and form into a dough.  Wrap into a plastic wrap and place into the freezer for 1 hour.

Put the shredded chicken to boil, add the seasonings for the filling and mix together until well combined.

Put a pot on the stove and allow it to hot.  Add oil.  Add the onion and garlic and sauté for a few minutes.  Add the seasoned chicken and carrot.  Mix together well.

Dust counter top with a bit of dry all purpose flour.  Gently roll out the dough.  Use a glass to cut out circles in the dough.  You will have to repeat this process until all the dough is used up.  Place some of the chicken filling onto one of the pieces of cut out dough. Fold over the dough, press down the edges with a fork and place onto a greased baking tray.  Continue until all the dough is used up.

Brush with a bit of egg wash on each of the chicken patties.  Set oven at 350 degrees.  Baking time 25 minutes.
