Trinidad Coconut Sugar Cake Recipe


2 cups sugar
1/2 cup water
2 cups grated coconut
1 tsp mixed essence
Bay leaf
Cinnamon powder
Food coloring (optional).

Boil sugar with bay leaf and water to form a light syrup. You can remove the bay leaf if u wish.

When bubbles the size of small pearls appear add grated coconut, a little cinnamon powder, mixed essence and food coloring if using.

Cook until the coconut mixture comes away clean from the sides of the pan quite easily, remove from heat and beat with a spoon for a couple of minutes.

Drop by spoon on a greased cookie sheet or banana leaf. Allow to cool until harden completely.
