Savory Green Banana Pie Recipe


Green figs (Trinidad and Tobago) aka green bananas are so nutritious and packed with iron so I am always excited to try various recipes with  green bananas.  So I am going to show you how to make a green banana pie

Ingredients
6 green bananas aka figs
1/2 sweet pepper finely chopped
parsley
1/2 onion finely chopped
1 tablespoon butter
salt to taste
black pepper to taste
Evaporated milk
Grated cheese.

Method
Cut off the ends of the green bananas and put into a pot of water and put on the stove.  Allow the bananas to cook.  The skin of the green bananas will burst open a bit and will become a darker green color. 

When the bananas are cool, peel off the skin.  In St. Vincent and other parts of the Caribbean Islands the skin of the bananas are peeled off before putting to cook.

Cut the peeled green bananas into small pieces and mash with potato masher.  You can use a fork to mash up the larger pieces of green bananas.

Add the other ingredients and mix together well.  Transfer to greased baking dish and garnish with grated cheese. Set oven 350 degrees.  Baking time about 30 minutes.

  1. What kind of onion do you use? White, yellow, red or something else? I am making this dish for a young lady in college here in the US, who is from Dominica. She is missing home, but I am from the midwest and don't know the carribbean flavors just yet. I'd really like for her to have a taste of home. Also, if I were to add tuna… her mother did, I was told…. is it ok to use canned, or should I get fresh from the deli?

  2. Hello thanks for contacting me. I used a regular white onion. As for the tuna I never tried that. If you decide to use the canned tuna be mindful of the amount of salt you add as it may already have salt added.
