Roast corn was once a very popular street food in Trinidad and Tobago. Its a rare sight these days. I remember a few years when we traveled to St. Vincent I was so excited to see a roast corn vendor, I just had to stop and get some. I recently learned that roast corn is a very popular street in Nigeria, as well, when the corn is in season.
The beautiful thing about roast corn it is 100% natural and vegan. Nothing is added to it. The raw corn is placed on a coal pot with home made grill and the corn is allowed to get charred. For presentation, they are placed in piece of corn husk.
You can make roast corn at home. You can get the fresh corn from the farmers market or at the grocery store. The first most tedious step is to remove the husk and silk from the corn. Set aside a few pieces of the husk for presentation.

Put the raw corn on a stove top grill, BBQ grill or just on the fire on the stove. You just have to monitor the corn by turning the corn with a tong periodically until they are charred.
