Recipe For Vegan Coconut Bread | Best Coconut Bread Recipe Ever

Hey Hey Hey folks, are you on a vegan diet and are looking for a easy vegan homemade bread recipe?  Well look no further!  This is the best vegan bread recipe for you.  Remember you don’t have to be on a vegan diet to enjoy a good tasting vegan dish.  This recipe is for one loaf of vegan coconut bread.

Ingredients
2 cups all purpose flour
2 tablespoons brown sugar
1 teaspoon salt
1 tablespoon yeast
1 cup grated coconut
2 tablespoons coconut oil
1/2 cup lukewarm water
Method
In a mixing bowl add the dry ingredients – all purpose flour, brown sugar, yeast and salt.  Mix together very well. 
Steps to extract the coconut from a dry coconut:  Using the blunt side of a heavy knife or hammer, pound the dry coconut until it cracks open.  Use a knife to dig out the white inside of the dry coconut.  Wash and cut up into small pieces.  Another option is to use unsweetened grated coconut that you can buy in the grocery store. 
Add the grated coconut (use a food processor for this step if not a hand grater will suffice) and mix together well.  Add the coconut oil and mix together well.  Gradually add the water and form the ingredients into a dough. The dough might be a little rough. Cover the bowl with a damp paper towel or kitchen towel and allow the dough to rest for 5-10 minutes.
After that time has passed, uncover the bowl and knead the dough, this time it will be smoother.  Cover the dough and allow to rest for another 10 minutes.  Grease (you can use a non stick spray, a bit of cooking oil or some butter) a bread pan and set aside.
The dough should have risen quite a bit by now.  Punch down on the dough and knead again.  Fold as seen in video and place into the greased bread pan.  Cover the bread pans with a damp paper towel or kitchen towel.  The dough will rise and fill the bread pans.
Set oven to 350 degrees Fahrenheit (177 degrees Celsius)Place bread pans in the preheated oven and allow the bread to bake for 25 minutes.
