Ingredients
1 cup rice
1/2 large onion finely chopped
1 cup coconut milk
11/2 cups pumpkin cut into small pieces
I cup raw beetroot cut up into small pieces
1 cup peas and carrots
Seasoning of your choice (I used 1 Maggie cube)

Method
Put your pot on the stove and add about 2-3 tablespoons of oil. Add the onion and allow to sauté for about 2 minutes. Add the beetroot and pumpkin, mix together well and allow these ingredients to sauté for about 3 minutes.
Add rice and mix with the other ingredients. Pour in the coconut milk and water. Add seasoning salt of your choice. Allow the rice to cook. When the rice is almost cooked. Add the peas and carrots at this point as they are already.
