Hey hey hey folks, welcome to my blog post! I am finding a lot of these fritters recipes and am really enjoying them. The ones that are more enticing to me are when they are totally vegan and gluten free. Just perfect! However this ochro/okra fritters recipe is not gluten free.
12 Ochro /Okra sliced
3 garlic cloves grated
4 seasoning peppers finely chopped
1 stick chive finely chopped
1 cup all purpose flour
1 small onion finely chopped
All purpose seasoning
Pepper flakes (optional)
3/4 cup water
1 1/2 cups oil
You can use the fresh ochro/okra or frozen ochro/okra. Use your favorite knife to cut off the top of each ochro/okra before slicing.
Put a pot on the stove and allow it to hot. Add about 2 tablespoons of oil, then add the onion, garlic, chive and seasoning peppers. Saute them for a few seconds. Add the ochro/okra and allow to fry for about 3-4 minutes.
Transfer cooked ochro to a mixing bowl. Add the flour, all purpose seasoning, pepper flakes and parsley flakes (you can season this mixture with your favorite seasonings). Mix together well. Add 3/4 cups water and mix together well.
Put a frying pan on the stove and allow it to hot. Add a generous amount of oil and allow the oil to hot. Take out a spoonful of the mixture and carefully put it into the hot oil. Repeat this until the pot cannot hold any more.
Allow the bottom side of each fritter to get golden brown and then turn over. When the other side has gotten golden brown, remove from the frying pan and place on a plate lined with paper towel. Enjoy!!
