2 tablespoons oil
1/2 onion finely diced
3-4 garlic cloves finely chopped
3 seasoning peppers finely chopped
1/4 red sweet pepper finely chopped
12 small ochro/okra sliced
1 cup rice
2 cups water or 1 can coconut milk
Put a pot on the stove, allow it to hot and add the oil. Add the onion, garlic and seasoning peppers and allow them to saute for a few seconds. Add the sweet pepper, ochro/okra. Season with your favorite all purpose seasonings.
Add the rice and mix together well. Add water, lower heat to medium, cover the pot and allow the rice to cook. After a few minutes, taste and add more salt if necessary.
When the rice is fully cooked, turn off the stove and transfer to your favor dish, a ceramic food warmer maybe, until ready to serve. Enjoy!
