Ingredients
For the dough:
3/4 cup cold margarine
3/4 cup cold shortening
4 cups all purpose flour
1 teaspoon salt
cold water

For The Filling:
1/2 cup granulated sugar
3/4 cup grated coconut
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla essence
red food coloring


Method
In a mixing boil, add the dry ingredients – flour, salt and combine together. Rub in the margarine and shortening until it looks crumbly. Gradually add enough cold ice water to the flour mixture. Do not knead, just pull the mixture together and form a dough. Refrigerate for 1 hour.


For the filling: Put the coconut into a pot, add the sugar and mix together. Allow the sugar to melt. Add the other ingredients and mix together well. Add enough food coloring – a drop at a time to get your desired color for the filling. Turn off the stove and allow the filling to cool.


Preheat oven to 350 degrees. Roll out dough. Make any shape or size you desire. You can also roll out the entire dough and spread the coconut filling, then roll up like a jelly roll. Place them on a greased baking sheet and brush the top with a beaten egg. Bake for 30 minutes. Let cool for 10 minutes then sprinkle sugar on top.
