How To Make Delicious Curry Duck Trinidad Style

In this blog post I share how to make delicious curry duck Trinidad style. Curry duck can be served simply with some white rice or your favorite roti. Absolutely delicious!!!


Ingredients
3 lbs of duck cleaned and cut up into small pieces
1 head of garlic minced
2 tablespoons lime juice
1 teaspoon black pepper
1 tablespoon salt
4 tablespoons green seasoning
1 hot pepper finely chopped

Ingredients To Cook
6 pimentos finely chopped
1 onion sliced
1 bunch of chadon beni finely chopped
2 garlic cloes finely chopped
2 tablespoons madras curry
1/2 tablespoon turmeric powder
1 tablespoon amchar masala
2 teaspoon geera
2 cups coconut water


Method
Place duck into a bowl and season with salt, black pepper, hot pepper, green seasoning and lime juice. Mix together well, cover the bowl and refrigerate seasoned duck for 4-6 hours.


In a small bowl add the madras curry, geera, turmeric powder and amchar masala with 2 tablespoons of water. Mix together well until a paste is formed. Set aside.


Remove the seasoned duck from the fridge. Place a pot on the stove and allow it to hot. Add garlic, sauté for a few minutes then add the curry mixture and mix for a few seconds.


Add the seasoned duck, pimentos, onion and mix all the ingredients together ensure that the meat is fully coated with the curry mixture. Adjust heat to medium and cover the pot. Allow the duck meat to cook in the steam for 15 minutes.


Remove the pot cover, add the coconut milk, chadon beni and 1 hot pepper. Allow the curry duck to simmer for another 15 minutes.
