How To Make Delicious Baiganee Trinidad Recipe

In this blog post I share how to make delicious baiganee – a Trinidad recipe. Baiganee is made with eggplant and is a popular street food in Trinidad and Tobago.


Ingredients
1 eggplant
2 tsp adobo seasoning
2 cups of split peas Soaked overnight
4 garlic cloves
½ tsp of saffron powder
½ tsp of salt
½ tsp of baking powder
1 1/2 cups of oil


Method
Slice eggplant into thin slices less than 1/4 inch. Place slices into large bowl. Add adobo seasoning and mix together.

In a food processor, blend together split peas and garlic cloves. Transfer blended split peas mix to a bowl. Add saffron powder, salt, baking powder. Mix together and allow mixture to set for 10-15 minutes.


Heat oil in pan. Coat both sides of each eggplant slice with the split peas mix and place into pot with oil. Flipping each side and cooking until dark golden brown. Remove from pan and place on place lined with paper towel.


Use tamarind sauce as dipping sauce.
