Ingredients
4 portugals pronounced as pootegal in Trinidad and Tobago
3 garlic cloves
juice of 1/2 a lemon
hot pepper
3-4 leaf shado beni aka culantro aka racao
1 teaspoon salt
black pepper
1 stick of chive finely chopped
Method
Grate the garlic cloves, finely chop the shado beni aka culantro aka racao. Cut a small piece of the hot pepper and finely chop. Note after cutting up the hot pepper, wash your hands thoroughly.

Peel the portugal and separate into sections as instructed in the video below. Place into a mixing bowl.

Finely chop the shadon beni leaves, garlic, hot pepper and add to the bowl with the portugal clementines. Add all the other ingredients as listed above and mix together well. Allow the portugal chow to marinate for a minimum of 30 minutes then enjoy!!!
