Currant Rolls Recipe

Ingredients

Pastry Dough

1 1/2 cups of all purpose flour
1/2 cup of cold water
1/4 tsp salt
3/4 cup cold unsalted butter

Filling
1 cup of currents
1/4 cup white sugar
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tsp vanilla

Method
Place the flour and salt into a mixing bowl and mix together well.  Gradually add the water and knead into a dough. Refrigerate for 15mins.

While this is chilling take your cold butter and place it between 2 pieces for waxed paper and pound it our flat to a 1/4 inch with a rolling pin. 
 
Take out chilled dough and roll on a lightly flours board to 1/2 thick. Place the flattened butter on the dough and fold the ends of the dough over the butter.

Roll the dough thin and then fold into 3rds and wrap in plastic wrap. Place in the fridge for 30 mins. Repeat this step 3 times.
In a small bowl mix together the currents, white sugar, nutmeg, cinnamon and vanilla.

When you roll out your dough the 4th time, roll it out thinly in a rectangular shape. Add all the filling liberally over the dough. Roll the dough into a log tightly. Put the seam side down on a greased cookie sheet and bake at 400 degrees for 20 mins.

Allow to cool for 10 mins, then slice the log diagonally, and serve.
