Hey hey hey folks, today I am sharing a Caribbean recipe for BBQ pigtails. As you may know I love pigtails so when I heard about BBQ pigtails I was ecstatic!!
2 pounds pigtails
1/2 cup of your favorite BBQ sauce
Wash the pigtails with some lime juice and cut the pigtails into manageable small pieces, if there were not cut already. Place into a pot, add water and put the pot on the stove and allow the pigtails to boil. The aim here is to tenderize the pigtails and remove most of the salt.
After about 15 minutes, remove the pot from the stove, through out the water, add more water and put the pot on the stove for another 15 minutes. Do this for two more times – until the pigtails are tender.
Put the pigtails into a bowl and add the BBQ sauce and other ingredients and mix together well. Transfer to a baking tray. Set oven to 350 degrees. Place baking tray into the oven and bake pig tails for about 30 minutes.
