Ingredients
1 can black beans (drained)
1/2 medium red onion finely chopped
3 garlic cloves
1 sticks of chive finely chopped
Parsley finely chopped
Oil to fry
Salt and black pepper to taste
Pepper sauce (optional)
½ green (or any colour you like) sweet pepper cut up into small pieces.
3 tablespoons bread crumbs
A pinch of Turmeric powder
¼ teaspoon ground ginger
Method

Method
Drain the can of black beans and put the black beans into a mixing bowl. You can also use the dry black beans but you will have to be tenderize the black beans first first. A easy way to do this is to put the dry black beans into a slow cooker and allow the black beans to tenderize over night.
Use a potato masher and mash the black beans.
In a fry pan, add about one tablespoons of oil, add the onion, garlic and sauté for a few minutes.
Add the sweet peppers and sauté for 2 minutes. Turn off the stove.
Add the sautéed onion, garlic and sweet peppers to the mashed black beans,
Add the chive, parsley, salt and black pepper and mix together well.
Add the turmeric powder and ginger powder. Mix all the ingredients well.
Add the bread crumbs. you can also add some flour if you find the mixture is still a bit too moist.
Make a circular pattie with two tablespoons of the mixture.
Continue the process until all the mixture is used up. Put about 1/4 cup of oil in a frying pan. Allow the oil to hot. Put the patties into the frying pan. The bottom of each pattie will brown.
Turn over and allow the other side to get brown. Remove the patties from the fry pan and place on a plate lined with a paper towel. Enjoy.
